Avocado Toast with Poached Egg


1 ripe avocado

2 eggs

2 slices of whole grain bread

Salt and pepper, to taste

Optional toppings: red pepper flakes, chopped herbs, feta cheese, sliced tomatoes


Fill a saucepan with water and bring it to a gentle simmer.

Add a splash of vinegar to the water (helps the eggs hold their shape).

Crack each egg into a separate small bowl.

Create a gentle whirlpool in the simmering water using a spoon.

Carefully slide the eggs, one at a time, into the swirling water.

Let the eggs cook for about 3-4 minutes for a runny yolk, or longer if you prefer a firmer yolk.

Remove the poached eggs using a slotted spoon and place them on a paper towel to drain excess water.

Cut the ripe avocado in half, remove the pit, and scoop the flesh into a bowl.

Mash the avocado with a fork until you achieve your desired level of chunkiness or smoothness.

Season the mashed avocado with salt and pepper to taste.

Toast the slices of whole grain bread until they’re crispy and golden brown.

Spread the mashed avocado evenly over the toasted bread slices.

Gently place a poached egg on top of each avocado-covered toast slice.
